The Buena Mulata pepper is a rare and visually stunning heirloom chili known for its dramatic color transformation as it matures. Originally preserved by seed historian William Woys Weaver, this variety is believed to have been passed down from Horace Pippin, a painter and gardener.

 

It has a heat level of around 30,000 to 50,000 Scoville units, similar to cayenne peppers. The flavor is fruity with a slight smokiness and a mild sweetness that balances its heat. One of its most remarkable traits is its shifting colors, starting as a deep violet before transitioning through shades of lavender, orange, and pink, finally ripening to a rich red.

 

The plants grow to about 18 to 24 inches tall with a compact, bushy habit. They are highly productive, producing slender peppers that reach about four to six inches in length. Buena Mulata peppers are excellent for fresh use, making hot sauces, or drying into chili flakes and powders.

 

Beyond their culinary appeal, these peppers are also valued as ornamental plants due to their striking foliage and ever-changing fruit colors.

Most people don’t know that the trick to big healthy peppers that you see in the store is calcium! Peppers require calcium to reach their maximum potential and to help them combat pests naturally. 

 

Use your spent eggshells or garden gypsum to add calcium to the soil in addition to vegetable fertilizer. I use organic chicken manure based fertilizer. 

 

Do not plant peppers where you just previously planted tomatoes, eggplant or potatoes as this can make them more susceptible to disease as they are all from
the same family. The pests that are attracted to these plants can remain in the soil for a while and build up and cause problems for future crops. They also use the same nutrients and can deplete the soil of what they need in particular if planted in the same spot. It’s always good as a general rule to add fresh soil and rotate all crops. 

 

Zones 4-8: Plant when all danger of frost has passed when daytime temps reach 70 degrees or start indoors with good strong lighting and transfer outdoors when temps have reached 70 degrees.

 

Zones 9+: Plant any time of year.
