Known by many names, White Goosefoot, Lamb’s Quarters, or simply Fat Hen, this ancient plant feeds both people and pollinators. Its young leaves are mild and spinach-like when steamed or sautéed, while its seeds can be ground into flour or cooked like quinoa, its close relative. Hardy, self-sowing, and generous, it thrives where other vegetables fail.
A plant once dismissed as a weed, now reclaimed as an heirloom of resilience, a reminder that good food often hides in plain sight.
