I had the pleasure of growing these in the intense heat of a Florida summer, although they will do well in temperatures anywhere from 65 to 90 degrees.
They get about 4-5 feet tall and produce beautiful, small yellow sunflowers, about 3-4 inches wide, on multiple stems.

After the flowers fade, tubers can be harvested and prepared as you would potatoes, either by boiling and mashing or making into French fries by traditional frying or an air fryer. They taste like potatoes but have substantially less starch, making them a good choice for diabetics. They are also high in nutrients, including B vitamins, a great survival food too!
Perennial zones 3-11. Tubers will actually over winter in the ground and can be left to multiply for a field of them! Each year, the tubers will grow larger and produce more tubers near the parent plants. You can harvest some and leave some for the following season as well.
